Extra scenes! Squeeeeeeeeeeeeee! Boromir! Denethor! Extra Faramir! Merry! Pippin! Pipeweed and Ent drafts! They add many bits of character it's not true. Though I'm agreed that the stew scene is a bit extraneous, but its fun in adding a little bit to Eowyn's understanding that Aragorn is a little bit scary and not just the big brave warrior she first saw. Plus the absolute desperation of 'why can't I fight' now shows how young she is... Mind you, I tend to regard all Arwen scenes in this as completely extraneous as it is.
